About Me

Hej! I’m Lauren Costabile, I’m a student at Franklin & Marshall College and I’m joint majoring in Environmental Studies and Public Policy. Here in Copenhagen my Core Course program is Sustainable Food: Production and Consumption. I’ll be living in the Culinary Living & Learning Community right in heart of Copenhagen! During my semester I will be taking: my Core Course class, Sustainable by Design, Environmental Philosophy, Anthropology of Food, and Danish Language & Culture.

I’m hoping to immerse myself in Danish culture and experience the meaning of hygge. I am fortunate enough to be pair with a visiting host family so for a couple times a month I will be visiting them and exploring Danish culture first hand!

I love food, incase you couldn’t tell from looking at my list of courses and my living situation. I’m excited to venture into Danish cuisine, cooking more myself and with my housemates. I feel like here in the US we eat out at restaurants very often, yet I’ve heard that in Copenhagen locals definitely cherish cooking at home (hygge!) more often than we do here. I am interested in exploring the differences between Copenhagen and the US both in environmental policy standards and personal lifestyle. Copenhagen isn’t called the ‘happiest city in the world’ for nothing!

Hope you enjoy following me and my journey here over the next couple of months. It is important to realize that even though I am abroad and (hopefully) having the time of my life, it is important to realize that there will be challenges. Whether these challenges are more logistical, situational, or personal, I am preparing myself to overcome these hurdles one way or another. This blog will serve many purposes but one thing I do promise is that I will always be transparent and honest about my experience here. I look forward to gaining independence, learning more about myself, and experiencing everything Denmark has to offer!
